Since September 2019, the Crous network has been committed to the “Green Monday” initiative.
In this new academic year, and while ensuring compliance with government health instructions in its catering areas, the Crous renew their commitment to this approach.
By honoring every Monday, in the university restaurants of the 26 Crous de France, a quality vegetarian dish of the day, the Green Monday operation makes guests want to reduce their consumption of animal proteins and favor vegetable proteins. The nutritional quality of university catering is in fact a constant concern of the CROUS, as is its commitment to sustainable development.
This year, it is the legumes that Lundi Vert is celebrating in the Crous.
